Paranubes is rum made from fresh pressed cane juice from Oaxaca Mexico. This fresh pressed just is wildly fermented before being distilled. This bottling was aged for 18 months in New American Oak before being bottled at full proof

Nose:  Peppery, Vanilla, oak spice, Brine

Palate: Medium mouthfeel, peppery, vanilla, brine, tannins

Finish: Medium length, bitter, burned caramel, black pepper, black tea, tannins


Conclusion: Yeah, not a fan of this one. New American Oak does not play well with this distillate. They are fighting for dominance and the flavors end up being muddle in a way that is not enjoyable. Heavy bitter tannins make me wish the finish was much shorter. Any of the nice flavors I expect from a cane juice rum is buried under the oak. I was excited to try this but it is so disappointing.
