This rum was created at Ninefold distillery, which is locted in Dumfries and Galloway in Scotland. This rum was produced using molasses. This molasses is fermented in a stainless steel tank for 4 days and distilled on a 500 litre copper pot still. The rum is then bottled with no additives but water.

Nose: Bit of lime, faint vanilla
Palate: Thin mouthfeel, vanilla, lime, a hint of pepper
Finish: Short, peppery, lime, slight banana
Conclusion: While I do commend the folks at Ninefold for making rum in Scotland, this particular bottling falls sadly into the same category as some craft US rum’s I’ve tried. That is light on flavor, short on finish, and just generally boring to sip neat for me.
