Ninefold is a rum distillery located in Annandale, Dumfries, and Galloway Scotland that was founded in 2019. The fermentation for this rum uses two yeasts and occurs over 3-4 days. It is then distilled on a hybrid copper pot still and put into American Oak barrels for at least 1.5 years before being bottled with no additives.

Nose: Vanilla, slight pepper, caramel
Palate: Light mouthfeel, vanilla, pepper, a touch of brine
Finish: Short finish, vanilla, pepper, touch of toasted brown sugar
Conclusion: Overall, pretty nice. Good flavors that are just kind of that classic aged rum that you want. Not much else to say, just some good rum.
