Alambique Serrano is a brand of rum from the same distillery that produces Canada. This distillery is on it’s third generation of distilling, with brothers Isidoro, Rommel, William, and Axel Peralata distilling. This single barrel of rum was made from cane harvested from 2500-3800 feet above sea level. That cane was of the Java varietal and grown by the estate for the rum. The case was crushed and the fresh juice put into pine vats for up to 10 days of wild fermentation. It is then distilled on a pot still. This was put into new French oak cask and aged for 17 months before resting in an open top demi-john for 6 months of resting. It was bottled at cask strength with no additives for K&L Wines in California.

Nose: Green Apple, Black Tea, Allspice, touch of honey, olives, leather, dark chocolate, graham cracker, slight campfire smoke, mint, antiseptic

Palate: Thick oily mouthfeel, Touch of leather, black tea, olives, cardamom, dark chocolate, dirty chai, graham cracker, slight campfire smoke, mint, antiseptic

Finish:  Long finish, Pine, Dark Chocolate, Figs, Black Tea, Earthy, graham cracker, antiseptic,lemon, mint

Conclusion: This is an excellent and compelling rum. Once again despite the relative low age statement here it really brings a punch. A mixing bowl of flavors that when listed out sound like they shouldn’t work so well together but they just do. Fruits, a good heft of spices, swirling industrial and campfire smoke with a smattering of underlying sweetness to balance it out. This walks the line of a wild unaged rum tempered out with a touch of ageing in some active oak. This will keep you coming back for more to work your way through.
