Folks, here we have a bottle of age cane juice rum from Cheramie, who distills their rum at Porchjam distillery in New Orleans. This is a single cask of rum made from fresh pressed cane juice, aged for a number of years, then bottled at a high proof with no additives. This was bottled for Cane and Table, a New Orleans restaurant.

Nose: Vanilla, Brine, Nutmeg, Caramel, banana
Palate: Medium mouthfeel, Green apple, Vanilla, touch of brine, caramel, banana bread
Finish: Medium length finish, Chocolate, Green Apple, Vanilla, Brine, Caramel, banana bread
Conclusion: I did not expect this aged cane juice rum to be this good, but it is very tasty. It is bright with citrus, a touch of brine, tropical fruits and spices. This is really quite exceptional and shows that a deft hand has guided the ageing process. Im gonna have to get me a bottle of this somehow.
