This is a single cask of cane juice rum from Alambique Serrano. This rum was made from the java varietal of cane and grown at 2500-3800 feet. The crushed cane then ferments in Pine vats with wild yeast that was distilled in March 2022 on a copper Alembic pot still by Rommel Krassel. It was aged for 28 months in a virgin French Oak cask in a dry climate . They then bottled it at cask strength with no additives for Lucus Assis & Off Premise.

Nose: Ginger, Nutmeg, Vanilla, Allspice, Toasted Brown Sugar, Pear Skin

Palate: Thick oily mouthfeel, Ginger, Nutmeg, Allspice, Earthy, Black Pepper, Minerality,

Finish: Long finish, black pepper, Allspice, Pear Skin, Earthy, Ginger


Conclusion: Yet another excellent rum from Alambique Serrano. This one is a spice driven rum that just explodes with flavor out of the glass. They do some really unique things and this is one of my favorite “new” rum brands / bottlings for a reason.

  • 95-100: As good as it gets. Jaw-dropping, eye-widening, unforgettable whisky.
  • 90-94: Sublime, a personal favorite in its category.
  • 85-89: Excellent, a standout dram.
  • 80-84: Quite good. Quality stuff.
  • 75-79: Decent whisky worth tasting.
  • 70-74: Meh. It’s definitely drinkable, but it can do better.
  • 60-69: Not so good. I might not turn down a glass if I needed a drink.
  • 50-59: Save it for mixing.
  • 0-49: Blech.
