This sample was provided to me by a producer, distributor, or some other industry source free-of-charge. No compensation, outside of the sample, was received and there were no strings attached.
This rum was made from cane of the Java varietal and grown in Santa Maria Tlalixtac, Oaxaca at 2,500-3,800 feet above sea level. The cane was pressed for cane juice and fermented in steel and pine tanks with wild yeast. It was distilled by Rommel Krassel in copper alembic pot stills. It then aged for 22 months in new Acacia Oak followed by another 4 months in an ex-red wine cask. It was then bottled at cask strength with no additives.

Palate: Thick oily mouthfeel, Sandalwood, Black Pepper, Grape Skins, Tobacco Leaf, allspice, raspberry
Finish: Long length finish, Tobacco Leaf, Black Pepper, Grape Skins, Allspice, Sandalwood
Conclusion: Excellent. It’s a bit spicy, fruity, tons of savory notes that hang about and form the backbone of the flavor profile. A hint of brine pops in and out. Minerality is here in droves as well. It’s just really damn good. They know how to manage their casks very well to prevent veering into being too powerful on the distillate.

- 70-74: Meh. It’s definitely drinkable, but it can do better.
- 60-69: Not so good. I might not turn down a glass if I needed a drink.
- 50-59: Save it for mixing.
- 0-49: Blech.
