Alambique Serrano de Cobre

Review by: The Auditor

Review #1328; Rum #633

This is one of the many many bottlings of Alambique Serrano rums that have come to market recently. This is made from fresh pressed cane juice that was distilled in a custom copper pot still before being bottled at still strength. It was bottled for Baytowne in Rochester New York in conjunction with the Rumchester Cane Society.

Distillery: Alambique Serrano

Bottler: Alambique Serrano

Region:  Mexico

Still: Pot

ABV: 68.7%

Nose: Salted Lemon, Apple Cider Vinegar, Red Apples, Raspberry, Cantaloupe, Minerality, Earthy

Palate: Thick oily mouthfeel, Cantaloupe, Red Apples, Apple Cider Vinegar, Salted Lemon, Minerality, Earthy, Cinnamon

Finish:  Long finish, Cantaloupe, Red Apple, Salted Lemon, Minerality, Nutmeg, Peppery, Cinnamon

Conclusion: Man, Alambique really knows how to bottle some incredible offerings. Every unaged product they’ve released has been among the best in the category for me. This is very viscous, fruity, a touch of spice and brine, and the citrus really helps to balance out the fruity sweetness. It’s complex and well balanced, and that pleasant apple and nutmeg just sits for awhile on the finish. It’s a shade under the Cartier 30 batch 2 for me, but it’s an incredible offering of rum.

Final Score: 96
