Rollins Distillery is a craft distillery located in the Florida Panhandle in Midway, Florida. Though they make a few products, this particular offering was a limited release in 2024. This cane juice rum was dharvested from 250 gallons of fresh-pressed cane juice from Presley Farms located in Perdido, AL. The juice then fermented for 2 weeks before being distilled in their 4 plate hybrid pot still. It then rested for 16 months and brought down to 52.35%. It was then bottled with no additives.

Nose: Pungent, Lemon Peel, Grassy, Red onion, Raw Bell Pepper, Vegetal Sweetness, Brine

Palate: Medium oily mouthfeel, Lemongrass, Red Onion, Minerality, Bell pepper, touch of vegetal sweetness, Brine

Finish:  Medium length finish, Minerality, Bell Pepper, Vanilla, Brine, Lemongrass


Conclusion: If you had handed me this blind and just told me I was going to drink rum from a Florida distillery, full on bias here, I would have been less than enthused. However, this is a pretty darn good cane juice rum. The flavors pop and they are all-pleasant and work well together. Overall very solid from Rollins Distillery.
