Mater Purple Cane

Review by: The Auditor

Review #1374; Rum #677

Mater is a new rum brand that comes from the Almba Distilleria Artigianale, a distillery located on the island of Sicily in Italy. Here, the single estate grows and harvest their cane by hand, crush the cane with a small mill, and ferment with oenological yeasts, for 72-96 hours. It is then distilled in a 600 liter pot/column hybrid still. After distillation, the rum is rested in stainless steel before being bottled. This bottling was done with the Purple Cane varietal and bottled with no additives. Also, cane juice rum being made in Italy, how cool is that?

Conclusion: This is a great expression of fresh pressed cane juice rum. It’s savory, sweet, a bit of umami. It tastes very refreshing and has a great mouthfeel and finish. Its very earthy too in a way I find enjoyable and has that rain water note that makes things an instant classic for me.
