Mater Yellow Cane

Review by: The Auditor

Review #1375; Rum #678

Mater is a new rum brand that comes from the Almba Distilleria Artigianale, a distillery located on the island of Sicily in Italy. Here, the single estate grows and harvest their cane by hand, crush the cane with a small mill, and ferment with oenological yeasts, for 72-96 hours. It is then distilled in a 600 liter pot/column hybrid still. After distillation, the rum is rested in stainless steel before being bottled. This bottling was done with the Yellow Cane varietal and bottled with no additives.

Conclusion: This is a very good rum. A nice pop of fruit sweetness, a bit of brine too. The lemongrass is a nice touch too. For me though, this is a clear step below the Purple Cane release.
