Here we have a limited release of an unaged cane juice rum from Alambique Serrano. This release was fermented for 25 days with wild yeast in open pine vats before being double distilled in a copper pot still and bottled at a high proof with no additives.

Nose: Tomato Sauce, Oregano, Vinegar, Bell Pepper, Apple, Mint, Grape

Palate: Thick oily mouthfeel Mint, Pineapple Rind, Tomato Sauce, Bell Pepper, Vinegar, Brine, Grape

Finish:  Long Finish, Mint, Vinegar, Brine, Pineapple Rind, Tomato Sauce, Bell Pepper, Grape


Conclusion: This is certainly the strangest unaged Alambique product I’ve had, but its so damn good. Its really acidic, funky, a bit fruity, with a load of spices to tie this weird trip all together. Its like dinner in a bottle in terms of the flavor profile, with some dessert sliding in to shake it up.

  • 70-74: Meh. It’s definitely drinkable, but it can do better.
  • 60-69: Not so good. I might not turn down a glass if I needed a drink.
  • 50-59: Save it for mixing.
