Chicago Cane Cooperative is a rum distillery located in Chicago Illinois, USA. This silver rum here was distilled from molasses on a 100% pot still, rested, then bottled with no additives. Of note, Chicago Cane Cooperative is a worker owned entity, so lets see how the rum is.

Nose: Vegetal, Vinegar, Chalk, Lemon Peel

Palate: Medium Mouthfeel, Vegetal, Chalk, Lemon Peel, Cardamom

Finish: Short Finish, Raw Bell Pepper, Chalky, Lemon Peel, Cardamom

To be honest, I heard rum made in Chicago and I feared for the worst. All things considered, this is pretty acceptable. Nice base flavor, an interesting vegetal note going on. It is a lot more interesting than many American craft rums I’ve had.

Final Score: 82

  • 90-94: Sublime, a personal favorite in its category.
  • 85-89: Excellent, a standout dram.
  • 80-84: Quite good. Quality stuff.

  • 70-74: Meh. It’s definitely drinkable, but it can do better.
  • 60-69: Not so good. I might not turn down a glass if I needed a drink.
  • 50-59: Save it for mixing.
