Spinnaker is the newest kid on the American Rum Independent Bottler block created by Kevin McBrayer and based out of Austin Texas. What are they offering? Additive free bottlings of rum from around the globe.
This first bottling of rum I am trying comes from Demerara Distillers Limited, located in Guyana. This rum was distilled from molasses on the Port Mourant double wooden pot still, aged for 8 years in Guyana, 4 years in the UK, and re-casked into a still-austin ex-bourbon cask for a few months before being bottled with no additives, adulterations, or chill filtrations.

Nose: Toasted Caramel, Bit Vegetal, Black Tea, Coriander, Black Pepper, Espresso, Dark Chocolate, Blackberry
Palate: Medium oily mouthfeel, Black Tea, Vegetal, Black Pepper, Espresso, Dark Chocolate, Blackberry
Finish: Medium length Finish, Star Anise, Black Tea, Black Pepper, Espresso, Dark Chocolate, Blackberry
Overall a great bottling of PM from Spinnaker. This is a savory bomb in all the best ways, a bit vegetal, dark chocolate, coffee, and just a bit of that star anise cherry cough syrup. A real winner for me from Spinnaker, and I am looking forward to trying the rest of the first releases.
