This is unaged cane juice aguardiente from the Krassel brothers distillery. This aguardiente came from cane harvested in their fields on their Palenque several thousand feet in the air. The cane is crushed by trapiche before fermenting in steel tanks with wild yeast for 6-10 days. It is then distilled on the Krassel still before being bottled with no additives.

For all my love of the stuff coming from the Krassel brothers, this is my first experience with Cañada and I find it to be great. It has that nice punch of an unaged cane juice aguardiente, good flavors of earth, brine, a hint of sweetness, and some nice spices to round it all out. This is certainly a great flavor profile for an always available cane juice product.
