Rolling Fork DOK Cane Spirit Collective Selection

Review #1489; Rum #788

This rum was bottled by American independent bottler Rolling Fork. This is a molasses based rum that was distilled on a copper pot still after fermenting wildly for a long time with muck, dunder, and cane vinegar at Hampden Estate in Jamaica. The rum aged for 15 months in Indiana at Rolling Fork’s warehouse in a Hungarian Tokaji cask before being bottled at cask strength with no additives for the Cane Spirit Collective group. This rum is the DOK marque, the highest ester rum Hampden makes clocking in at 1500- 1600 gr/HLP

Distillery: Hampden Estate

Bottler:  Rolling Fork

Region: Jamaica

Still: Pot

Palate:  Medium mouthfeel, Lemon, Pineapple, Grape Skin, Cement Glue, Allspice

Finish: Medium length finish, Lemon, Grape Skin, Cement Glue, Allspice, Pineapple Bark

This is great. I was worried that the finish would be too heavy but it appears DOK can stand up to anything. Pungent, fruity, a bit of spice as well. This is just a great bottling of rum.
